A few weeks ago, I tweeted that I was in the mood to bake and asked if anyone had recipe requests they would like to see on the blog. Cute Ashley replied “graham cracker brownies”.
At first I was like, “Ummm…..what?” I had never heard of or thought of something like that before. But the more I thought about it the more I realized, these could be pretty dang stellar! I played around in the kitchen for a bit, using my trusty brownie recipe as a template and made a few tweaks.
And stellar they are! Oh my goodness, I could eat the whole pan! I had to keep cutting more brownies for my little photoshoot because I kept eating the ones I had. These take hardly any time at all to make, and they are SO easy. Their buttery flavor and perfect chewy texture with just a smattering of chocolate chips makes me almost prefer them to regular brownies–but alas, I’m too much of a chocoholic for these to beat out my favorite brownies for 1st place in my heart.
My favorite part about making these graham cracker brownies was letting Joshua help me. This is the first time I’ve actually let him help me bake and he did surprisingly well! He was so happy to be able to help me. I’m so glad he loved it–he’s my permanent sous chef now. :)
Graham Cracker Brownies
yields one 9×13 pan
1 cup melted butter
1 cup flour
3/4 cup graham cracker crumbs
1/2 tsp salt
2 cups sugar
2 tsp vanilla
1/2 cup semi-sweet chocolate chips
Preheat oven to 350* Combine all ingredients in a large bowl and stir until combined.
Spray a 9×13″ metal pan with cooking spray. Pour 1/8 cup sugar into the pan and move the pan around until the sugar coats the entire bottom. Dump out any excess. Pour the batter into the pan and gently spread the top to fill the pan evenly (be careful not to move the sugar on the bottom around!
Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Cool and enjoy!
